Layered Mango Chia Seed Pudding Recipe

Ingredients

For the Chia Pudding

5 tbsp chia seeds

1 cup cashew milk

1 tbsp pure maple syrup

1 tsp vanilla extract

pinch pink salt

4 small green cardamom pods crushed into a powder

For the Mango Layer

1 cup fresh mango blended into liquid

For the Topping

2-3 tbsp fresh mango cut into small pieces

Instructions

1Crush the green cardamom pods with a mortar & pestle. Remove the green shells, keeping just the crushed seed powder.

2Mix together the chia pudding ingredients in a small bowl.

3Pour the blended mango mixture into the base of a cup or a glass jar.

4Add the chia seed mixture on top.

5Top with fresh mango pieces.

6Refrigerate for 15 minutes. Then enjoy!
