⅓ cup Medjool dates pitted

6 tbsp rolled oats

2 tbsp shredded long unsweetened coconut

1 tbsp chia seeds

1 tbsp dried blueberries sugar-free

¼ cup raw walnuts


1Pulse together all the ingredients for the granola in a blender. Do not fully blend it, but pulse it until there are chunks of nuts and dates, as a coarse-textured granola.

2Once it reaches the desired consistency, remove the granola from the blender.

3Pour into a bowl and add vegan yogurt, fresh fruits or milk to serve. Enjoy!
