Vegan No Bake Oatmeal Trail Mix Energy Bites (Gluten Free) Recipe

Ingredients

¼ cup coconut sugar

1½ tbsp refined coconut oil

1 tbsp oat milk

½ cup rolled oats

1½ tbsp pumpkin seeds

2 tbsp chia seeds

2½ tbsp + ½ tsp almond butter

2¼ tsp almond flour

¼ tsp vanilla extract

pinch pink salt

Instructions

1In a stovetop over low-medium heat, mix the first three ingredients with a rubber spatula. Bring them to a boil.

2Once boiling, remove from heat and add in the rest of the ingredients. Stir the mixture until all ingredients are incorporated and the dough can be shaped easily.

3Shape the dough into 8 balls and place in a container or on a tray lined with parchment paper. Freeze for 2 hours or until fully solid. Enjoy!
