Winter Jack Frost Snowballs Recipe

1⅓ cup raw, unsalted cashews If using salted cashews, do not add the extra salt below
⅛ teaspoon salt
1 teaspoon vanilla extract
8 teaspoons butterfly pea powder This gives it a blue color. You could also use blue spirulina.
2 cups shredded coconut Use sweetened shredded coconut if you want a sweeter taste. If you want it sugar-free, use unsweetened.
Pinch peppermint extract This is optional if you want to make it taste minty. I personally did not add it in mine.
1 cup shredded coconut This is to roll the balls in. You may need less but I would keep the whole cup to begin with.
1Add all ingredients (except the coconut at the end of the ingredients list for rolling) into a blender. Blend until a dough mixture is formed.
2Shape the dough into 20 even balls. Add the coconut to a bowl and roll the balls around to coat them.
