Vegan French Onion Soup Recipe

6 onion

4 cups vegetable broth

1 bottle 341 ml beer

fresh thyme to taste

1 tbsp dijon mustard

4 slices french bread

2 tbsp olive oil

1 cup Vegan Cheese of your choice or old cheddar if you are vegetarian of your choice or old cheddar if you are vegetarian

salt and pepper to taste

1 tbsp olive oil

3 tbsp maple syrup


1Preheat your oven t0 375 F

2When your oven is preheated, place your bread slices on a baking sheet, brush olive oil across both sides of each slice, and bake for 7-10 minutes, or until golden brown

3Meanwhile, slice the onions into thin strips

4Heat a saucepan over medium to medium-low heat with some olive oil

5Add your onions, maple syrup, and some salt and pepper and let everything cook slowly for about 25 minutes

6When your 25 minutes are up and your onions have transformed into a deep golden brown, add your beer let it cook for 5 minutes and then add the vegetable broth and the thyme .

7Bring the soup to a boil, reduce to a simmer, and cook for 15 minutes Season to taste with salt and pepper

8Turn your oven onto broil

9Poor the soup into bowls, and place the bowls on a baking sheet

10Place 1 slice of bread on top of the soup, and top with cheese (about ¼ cup)

11Place under the broiler for 1-3 minutes until the cheese is melted

12Serve immediately!
