Pineapple Fried Rice Recipe

2 tablespoons of coconut oil

1 onion

1 ½ cup chopped fresh pineapple

¾ cup chopped green onions

2 garlic cloves pressed or chopped

½ cup raw unsalted and chopped cashews

2 cups cooked and chilled brown rice

1 tablespoon reduced sodium tamari sauce

1 to 2 teaspoons chili or sriracha garlic sauce

1 small lime cut in half Salt, to taste


1Heat a large wok, once the pan is hot enough, add the oil, onion and pineapple.

2Cook, stirring constantly, until liquid has evaporated and pineapple is caramelized around the edges, about 3 to 5 minutes.

3Then add the green onion and garlic. Cook until fragrant, stirring constantly, about 30 seconds.

4Transfer the contents of the saucepan to the bowl. Reduce the heat to medium and add the oil to the pot. Pour in the cashews and cook until fragrant, stirring constantly, about 30 seconds. Add the rice to the pot and stir to combine.

5Cook until rice is heated through, stirring occasionally, about 3 minutes. Pour the contents of the bowl into the pot and stir to combine. Cook until contents are heated through, then remove saucepan from heat.

6Add the tamari and chili garlic sauce, to taste. Squeeze the juice of ½ lime over the rice and stir to combine. Season to taste with salt and set aside. Slice the remaining ½ lime into 4 wedges.

7Transfer the stir-fry to individual serving bowls and garnish each bowl with a lime wedge and a little cilantro.

8Serve with bottles of tamari and chili garlic sauce or a sriracha on the side, for those who want to add some to their bowls.
