Chocolate Cake Munch Cookies Recipe

½ cup dairy-free butter, softened
1 cup coconut sugar
1 tablespoon chia seeds or ground chia seeds
¾ cup soy milk
1 teaspoon vanilla
2 cups whole wheat flour
¼ cup protein powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup cocoa powder
1 cup walnuts, chopped
1Add butter and sugar to the bowl of a stand mixer. Mix on medium speed for 5 minutes.
2Meanwhile, mix the chia seeds with 3 tablespoons water.
3Add the chia mixture, milk, and vanilla to the butter and mix well at medium speed.
4Add the flour, protein powder, baking powder, baking soda, salt, and cocoa to a medium bowl. Mix well.
5Turn mixer on medium and slowly add the dry mixture. Add the walnuts and mix at low speed until combined. Place the mixture in the refrigerator from one hour to overnight.
6About 15 minutes before you’re ready to bake the cookies, preheat the oven to 400°F. Cut parchment paper to fit on a baking sheet. Set aside.
7Drop heaping tablespoons onto prepared cookie sheet, 2 inches apart. Roll into balls and then flatten by about half with the bottom of a measuring cup or some other strong material. They bake up thick. Bake for 8 minutes.
8Cool on a wire rack.
