Mediterranean Cauliflower Salad Recipe

Ingredients

1 teaspoon salt

1 tsp pepper

2 tbsp olive oil

1 cauliflower (cut into small florets)

1 cup cooked rice

⅓ cup olive oil

2 tablespoons lemon juice

1 tablespoon whole grain mustard

1 teaspoon coriander grounded seeds

1 red bell pepper (diced)

1 cup chickpeas

¼ cup parsley (finely chopped)

Instructions

1Preheat the oven to 375 °F

2Cut the cauliflower in florets, place on a baking. Add olive, salt and pepper mix well

3Cook the cauliflower for 20 to 25 minutes.

4In a large bowl, whisk olive oil, lemon juice, mustard, and coriander seeds.

5Add cauliflower, rice,bell pepper, chickpeas, and parsley. Stir well and serve.
