Chocolate Energy Balls Recipe

½ cup almond butter

3 tbsp maple syrup

1 teaspoon vanilla extract

3 tablespoons unsweetened cocoa powder

lukewarm water as needed

1 cup old-fashioned oats raw

¾ cup unsweetened toasted coconut

½ cup almond flour

¾ cup semi-sweet chocolate chips


1In a mixing bowl, combine the almond butter, maple syrup, vanilla and cocoa powder. If the mixture seems too thick, add a little lukewarm water to dilute.

2Add the oats, coconut, almond flour, stir until well coated. At this point, if the mixture still does not stick well, add up to 2 teaspoons of water as needed.

3Transfer the mixture to the refrigerator or freezer and refrigerate until almost set and easier to handle.

4Remove from refrigerator and shape into 1-inch balls.

5Melt the chocolate chips in the microwave (30 seconds, remove, mix and another 30 seconds)

6Dip the energy balls in the melted chocolate to coat them well. Place on a baking sheet lined with parchment paper.

7Put in the fridge for 15 minutes,

8Keep in an airtight container in the fridge up to a 1 week
