Chocolate Chip Cookie Dough Chickpea Cups Recipe Recipe

🔪Prep Time: 15 mins
1 can chickpeas
½ cup almond butter
½ cup oat milk
¼ cup Medjool dates
1 tsp vanilla extract
pinch pink salt
½ cup vegan semisweet chocolate chips
1Blend all ingredients except the chocolate chips in a food processor, until there are no chickpea chunks remaining and it becomes a dough that can be shaped into cookies.
2Lastly, stir in the chocolate chips by hand.
3Line a muffin tray with liners, and shape the cookie dough into 12 cups within the mold.
4Place in the fridge to harden for an hour before serving.
