Vegan Chocolate Maple Fudge Recipe Recipe

Ingredients

For the Chocolate Layer

¼ cup ripe avocado

¼ cup creamy almond butter

½ cup pure maple syrup add more as desired

½ cup semisweet vegan chocolate chips melted

¾ cup cacao powder

⅛ tsp vanilla extract

pinch pink salt

For the Maple Layer

¼ cup + 1½ tsp pure maple syrup

1 cup powdered sugar

1 tsp vegan butter

⅛ tsp pink salt

extra pecans optional topping

Instructions

1Melt the chocolate chips for this layer before blending. You can either melt them in a small saucepan over low heat, or put them in a microwave-safe bowl for 20 second intervals, stirring each time until melted.

2Blend together all ingredients, including the melted chocolate, for the chocolate layer in a high speed blender until fully blended.

3Pour fudge mixture evenly into a prepared pan lined with parchment paper. Use a rubber spatula to even out the layer. Place this in the freezer.

4Add the maple syrup and butter to a saucepan over medium heat, and keep stirring until it begins to boil, making sure it doesn't stick to the bottom.

5Once it boils, put it on low and let it simmer for about 4-5 minutes. Slowly add in the powdered sugar through a sieve.

6Stir the mixture as you add in the powdered sugar, until all of it is added in.

7Remove the chocolate fudge from the freezer and pour this layer on top.

8Once the layers are set, top each piece of fudge with an optional pecan.

9Cut the fudge into 8 pieces with a pizza cutter and enjoy!
