Slow Cooker Log For Thin Slices And Crumbles Recipe

Ingredients

1¼ cups vital wheat gluten

¼ cup chickpea flour

1 tablespoon mushroom powder

2 tablespoon nutritional yeast

½ teaspoon ground sage

½ teaspoon salt

¼ teaspoon garlic powder

¼ teaspoon onion powder

¾ cup tomato sauce

1 tablespoon tomato paste

2 cups vegetable broth

¼ cup tomato sauce

Instructions

1Add the gluten, flour, mushroom powder, nutritional yeast, sage, salt, and garlic and onion powders to a large bowl.

2Mix tomato sauce, tomato paste, and ¼ cup plus 1 tablespoon water in a small bowl. Pour the wet mixture into the dry ingredients.

3Mix and then knead for about 2 to 3 minutes or until mildly elastic. You will see the dough slightly pull back as you are kneading and it will be a bit sticky. Shape the seitan into a log.

4Pour 1 cup water, the vegetable broth, and tomato sauce into a 2½- to 3-quart slow cooker. Place the log in the slow cooker or roll loosely in cheesecloth and tie each end with cotton string. It does expand when cooking, so you shouldn’t roll it tight. If you don’t care that the outside is a bit lumpier after being cooked, then don’t bother to roll in cheesecloth. Cover slow cooker and turn to low. Cook on low for 6 hours.

5Remove the log from the liquid and place aside to cool. Store in the refrigerator for up to 5 days. It can also be frozen for 4 months.
