No Bake Peanut Butter Chocolate Chip Fudge Recipe Recipe

Ingredients

½ cup vegan butter melted

2 cups brown sugar

1 cup creamy peanut butter

1 tsp vanilla extract

3 cups icing sugar sifted through a sieve before using

pinch pink salt

½ cup vegan semisweet chocolate chips optional

Instructions

1In a pot over medium heat, add in the butter and sugar. Continue to stir until boiling; allow it to boil for one minute.

2Turn off the heat, stir in the peanut butter, vanilla and salt.

3Stir in the icing sugar until a mixture forms. Pour the mixture into a large bowl, and allow it to sit for a half hour in the refrigerator to cool down.

4Then, stir in the chocolate chips. If you stir them in before the mixture has cooled, they will melt.

5Spread the mixture evenly into a baking tray lined with parchment paper.

6Refrigerate for at least 2 hours, until firm.

7Use a sharp knife to cut the fudge into 16 servings. Enjoy!
