Cauliflower Alfredo Sauce Recipe

6 cloves garlic, peeled

1/4 white onion

1 ½ cups cauliflower florets

3/4 cup vegetable broth

¼ cup raw, unsalted cashews (Soak overnight if not using a high-speed blender.)

2 tsp nutritional yeast

1 Tbsp fresh lemon juice

½ tsp salt

⅛ tsp pepper


1Preheat the oven to 400°F. Place the garlic on a small sheet of foil. Fold the foil so that the garlic is completely covered and place the foil package on a sheet pan. Roast for 30 minutes.

2Meanwhile, in a medium-sized pot over medium-high heat, add the onion, cauliflower, vegetable stock and cashews. Cover with a lid and cook for 10 minutes.

3Transfer everything to a blender, along with the roasted garlic, nutritional yeast, lemon juice, salt and pepper. Blend until smooth. Taste and add more salt and pepper as necessary.
