Tofu Feta Recipe

1 14-oz package firm tofu

¼ cup apple cider vinegar

½ cup red wine vinegar

1 Tbsp dried oregano

1 Tbsp dried parsley

1 Tbsp garlic powder

¼ cup water

¼ cup lemon juice (about 2 lemons)


1In a large bowl, combine all of the ingredients. Cover and let marinate at least 2 hours (the longer, the better).

2Soy Allergy? Substitute chickpeas for the tofu.

3Spoiler Alert: Tofu Feta will stay fresh in an air-tight container in the refrigerator for 7 to 10 days.

4Batch it up! Tofu Feta is a tangy condiment in salads, bowls and casseroles.
