Herb Marinated White Beans Recipe

🔪Prep Time: 10 minutes


1 shallot, finely chopped

3 Tbsp white wine vinegar

3 Tbsp flat-leaf parsley, finely chopped

3 Tbsp fresh dill, finely chopped

2 Tbsp olive oil

1 clove garlic, minced

½ small lemon, juiced

¼ tsp salt

⅛ tsp pepper

2 15-oz cans white or cannellini beans, drained and rinsed


1Combine the shallot and vinegar in a small bowl. Allow to sit for 5 minutes.

2Meanwhile, mix the herbs and olive oil in a medium-sized bowl. Add the garlic, lemon juice, salt and pepper and stir well. Add the beans.

3Add the shallot mixture to the bean mix.
