Balsamic Chicken Salad Recipe

Ingredients
1 large onion, diced
3 cloves garlic
5 oz chicken breast, diced
1 tsp cumin
1 tsp paprika
2 tbsp balsamic glaze
2 tbsp tamari
2 cups tomatoes, chopped
2 cups cucumber, diced
4 cups lettuce, chopped
1/2 tsp salt
1 medium avocado, cubed
2 spring onions, chopped
1/2 tsp black pepper
1/3 cup cottage cheese

Instructions
1Cook the onion and a few cloves of garlic in a large frying pan for 2-3 minutes over a medium-high heat, until they start to soften. You can use either water or oil to sauté.
2Add the chicken breast, cumin and paprika. Cook for 7-8 minutes more, until the chicken breast is almost fully cooked through. Then, add the balsamic glaze and tamari, cooking for 2-3 minutes more.
3Transfer the chicken to a large mixing bowl together with the tomatoes, cucumber, lettuce, avocado, scallions, salt, pepper and cottage cheese. Stir together well, and serve immediately.
