Vegan Grain Free Chili Recipe

1 chopped yellow onion

1 chopped red and yellow bell pepper

3 stalks chopped celery

5 cloves minced garlic

1 cubed sweet potato

3 chopped carrots salt and pepper

2 tbsp hot chili powder

1 tsp paprika

1 tsp cumin

1/4 tsp cinnamon

1 tbsp unsweetened cacao powder

2 cans diced tomatoes

4-6 C vegetable broth

1/4 C tomato paste

1/2 can chopped chipotle peppers in adobo sauce (more or less depending on desired spice!)

1 can light kidney beans

1 can dark kidney beans

1 can pinto beans

1 can black beans

1 C yellow sweet corn

2 limes, juiced

sriracha, to taste

1-2 TBSP grade a maple syrup

A few handfuls of baby spinach

1 bunch of cilantro, chopped

1 C cherry tomatoes

More Cilantro and Avocado for topping!


1In a @lecreuset Dutch oven, sauté yellow onion, red bell pepper, yellow bell pepper, celery, garlic, sweet potato, and carrots for 5-7 minutes until tender.

2Season with salt, pepper, hot chili powder, paprika, cumin, cinnamon, unsweetened cocoa powder sautéing for a few more minutes.

3Add in diced tomatoes, vegetable broth, tomato paste, and chopped chipotles in adobo sauce. Bring to a boil.

4While boiling add in beans and yellow sweet corn. Reduce to simmer and cook for 10 more minutes.

5Add in lime juice, drizzle of sriracha, and maple syrup. Season to taste. Stir in a bunch of baby spinach, chopped cilantro, and cherry tomatoes and heat through.

6Serve topped with fresh cilantro and sliced avocado!
