Easy Cheese Ravioli Recipe Recipe

Ingredients
1/2 cup water
1/2 tsp salt
1 large egg yolk
1 3/4 cups plain flour
1 tbsp olive oil
1/2 cup basil
1/3 cup grated parmesan
1/4 cup grated cheddar
1/2 cup cream cheese
Instructions
1Add the water, salt and an egg yolk to a mixing bowl and whisk together thoroughly using a fork. Gradually add the flour and mix continuously. When a shaggy dough forms, add in the olive oil and mix once again to incorporate.
2Transfer the dough to a lightly floured surface and knead for around 10 minutes, until a dough forms. The dough should have some moisture, but if it feels sticky, add a little bitt more flour.
3Cover and set aside for around 20 minutes.
4Make the filling. Start by finely chopping the basil and transferring it to a mixing bowl. Now add the parmesan, cheddar, cream cheese and a little bit of sugar. mix together thoroughly.
5Divide the dough in half. Roll one of the halves into a very thin sheet, around 1/8 inch in thickness. It make be necessary to flip it a few times, flouring the dough as you go to ensure it doesn't stick to the rolling pin.
6Remove the edges of the dough to make a square, and use a knife to carefully mark out 16 squares. Using a small spoon or ice cream scoop, place around 2 tbsp filling in the centre of each square.
7Roll out the other half of the dough, remove the edges to make a square, and place it on top of the dough sheet with the filling. Press it down around the edges to seal.
8Use a knife or a ravioli cutter to cut the dough into 16 ravioli. Press down the edges using a fork, and give the ravioli a dusting of flour so that they don't stick together during the cooking process.
9Bring a large saucepan of lightly salted water to a simmer. Place the ravioli into the water and cook for around 3-4 minutes, until they rise to the surface. Remove using a slotted spoon and serve immediately.
