Easy Arugula Salmon Salad Recipe

5 oz salmon , fillet

1/2 tsp salt

1/2 tsp black pepper

1 large lemon, sliced

2 tbsp thyme leaves

1 cup Greek yogurt

1 tbsp mustard

2 cloves garlic, minced

1 tbsp apple cider vinegar

1 cup scallions, chopped

2 cups cherry tomatoes, halved

2 cups cucumber, chopped

3 cups arugula


1Preheat the oven to 180 degrees C/350 F. Line an oven-safe dish with aluminium foil, and place the salmon fillet in the centre.

2Season to taste with salt and pepper, and arrange lemon slices and fresh thyme on top. Bake for 25 minutes.

3Make the dressing: stir together the yogurt, mustard, crushed garlic cloves, apple cider vinegar and fresh scallions. Taste and adjust according to personal preference.

4Once the salmon is ready, flake it apart using a fork and transfer to a large mixing bowl. Now add tomatoes, cucumbers, arugula, and the yogurt dressing. Season to taste with salt and pepper, and serve!
