Vegan Tzatziki Sauce Recipe

Ingredients
½ English cucumber, unpeeled
1 cup vegan Greek yogurt
¼ cup fresh dill, finely chopped
3 garlic cloves, minced
2 Tbsp lemon juice
½ tsp salt
Instructions
1Finely grate the cucumber and place in a fine-mesh strainer set over a mixing bowl.
2In a mixing bowl, combine the strained cucumber, yogurt, dill, garlic, lemon juice and salt. Stir well, taste and add more lemon juice, dill or salt as desired.
3Spoiler Alert: Vegan Tzatziki Sauce will stay fresh in an air-tight container in the refrigerator for a week.
