Caramelized Onion Pasta (Vegan) Recipe

3 tbsp olive oil

4 cloves garlic, chopped

2 large red onions, sliced

10 oz pasta

2 cups mushrooms, diced

1 tsp salt

2 tbsp balsamic vinegar

1/2 cup vegan cheese, grated

1/2 cup cilantro , chopped


1Heat the oil in a large skillet over a low-medium heat. Add the garlic and onion. Allow the onions to cook and caramelise for around 30 minutes, stirring every couple of minutes.

2Around 5 minutes before the caramelisation process is done, start cooking the pasta according to instructions on packaging.

3Add the mushrooms to the skillet, together with salt and balsamic vinegar. Cook for another minutes, continuing to stir frequently, until the mushrooms soften.

4Drain the pasta, then transfer it to the skillet together with 1/2 cup pasta cooking water. Add grated vegan cheese and cilantro. Stir together, and you're ready to serve!
