Vegan Vanilla Pudding Recipe

Ingredients

▢ 3/4 cup White Granulated Sugar (150g)

▢ 3 Tbsp Cornstarch

▢ 1/4 tsp Salt

▢ 2 and 1/4 cups Soy Milk (540ml)

▢ 2 Tbsp Vegan Butter

▢ 1 tsp Vanilla Extract

Serving (Optional):

▢ Vegan Whipped Cream

▢ Crushed Golden Oreo Cookies

Instructions

1Add white granulated sugar, cornstarch and salt to a saucepan and whisk them together.

2Add soy milk slowly and whisk it in. Heat on medium heat and whisk constantly while it heats.

3Bring to the boil and let it boil for a full minute, whisking all the time, until it thickens.

4Remove from the heat and add vegan butter and vanilla extract and whisk in.

5Pour into small glasses or ramekins and smooth down.

6To prevent the puddings from forming a skin on top, you can top them with plastic wrap (optional) so that the plastic wrap is pressed directly onto the surface of the puddings.

7Place into the fridge for 2-3 hours to set.

8Serve topped with vegan whipped cream and crushed Golden Oreo cookies (optional).
