Vegan Tzatziki Recipe

🔪Prep Time: 10 minutes


1 C raw cashews, soaked for 20 minutes in hot water

1/2 C water

1/2 lime or lemon, juiced

2 garlic cloves

1/2 tsp sea salt

1/4 tsp ground black pepper

1/2 C shredded cucumber

3 tbsp fresh dill, finely chopped


1Drain and rinse cashews from the soaking water. Add to a high-powered blender along with water, lime (or lemon) juice, garlic, sea salt, and ground black pepper and blend until very smooth.

2Transfer to a bowl and stir in the shredded cucumber and chopped dill. Refrigerate for at least 1 hour before serving.
