Vegan Rice Pudding Recipe

3/4 cup Basmati Rice (150g) Dry Weight

6 and 2/3 cups Canned Coconut Milk (1600ml, 4 cans) Full Fat, Unsweetened

1 cup Water (240ml)

1/4 cup White Granulated Sugar (50g)

1/4 cup Light Brown Sugar (50g)

1/2 tsp Salt

1/2 tsp Vanilla Extract

2 Tbsp Vegan Butter (30g)

For Serving:

Sprinkle of Cinnamon


1Add the basmati rice, coconut milk, water, white sugar, brown sugar and salt to a large pot and bring to the boil stirring regularly.

2Turn the heat right down so that it is on a slow simmer, cover the pot and let it cook for around 50 mins, stirring at regular intervals, until it is the consistency of a thick, creamy custard.

3Stir in the vanilla extract and vegan butter and serve either hot or cold with a sprinkle of ground cinnamon.
