Vegan Peppermint Fudge Recipe

Ingredients

1 and 1/2 cups (375g) Cashew Butter (store-bought or homemade)

2 and 1/4 cups (393g) Chopped Vegan Chocolate or Chocolate Chips

1 tsp Peppermint Extract

Crushed Candy Canes (optional)

Instructions

1Add the cashew butter and chocolate to a microwave safe bowl.

2Microwave in 30-second intervals bringing it out to stir every 30-seconds until the chocolate and cashew butter is melted and well mixed together.

3Add the peppermint extract and stir in.

4Transfer to a parchment lined 8×8 square dish and smooth down.

5Add crushed candy canes to the top.

6Refrigerate until set.

7When set lift the whole block of fudge out by lifting the parchment paper. Cut into squares.

8Keep stored in the fridge and serve cold directly from the fridge.
