Vegan Peach Cobbler Recipe

3 pounds Ripe Yellow Peaches (1400g) Peeled and sliced, about 7 packed cups

1 and 1/2 Tbsp Lemon Juice

3/4 cup White Granulated Sugar (150g)

1 and 1/2 Tbsp Cornstarch

1/2 tsp Vanilla Extract

1/2 tsp Cinnamon

1/8 tsp Nutmeg

1/8 tsp Salt

Biscuit Topping:

2 cups All Purpose Flour (250g)

1/2 cup White Granulated Sugar (100g)

1 Tbsp Baking Powder

1/4 tsp Salt

1/2 cup Vegan Butter (112g)

1/2 cup Soy Milk (120ml) or other non-dairy milk


Vegan Whipped Cream

Vegan Ice Cream


1Preheat the oven to 350°F (180°C). Spray a 9x13 baking dish with non-stick spray.

2Add sliced peaches, lemon juice, white sugar, cornstarch, vanilla extract, cinnamon, nutmeg and salt to a mixing bowl and toss together. Set aside.

3Add all purpose flour to a mixing bowl along with white sugar, baking powder and salt and mix together.

4Add vegan butter and mix in with your hands until crumbly.

5Add soy milk and mix into a thick batter.

6Place the peaches into a 9x13 dish and smooth down.

7Spread the batter on top and use your fingers to spread it out as best you can over the top of the peaches.

8Place into the oven and bake for 55 minutes.

9The topping should be golden brown and cooked through. Check carefully by inserting a toothpick into the center of the cobbler to make sure that the topping is cooked through.

10Serve warm topped with a scoop of vegan ice cream or vegan whipped cream.
