Vegan Lemon Curd Recipe

1/2 cup Lemon Juice (120ml) Freshly Squeezed

1 cup White Granulated Sugar (200g)

1/2 tsp Lemon Extract

1/4 tsp Salt

1 cup Canned Coconut Cream (240ml) Unsweetened

2 Tbsp Cornstarch

1/8 tsp Turmeric


1Add the freshly squeezed lemon juice, white sugar, lemon extract, salt, coconut cream, cornstarch and turmeric to a saucepan and whisk together.

2Keep whisking and alternately stirring until it thickens. Whisk even more vigorously when it thickens so that you make sure it's nice and smooth.

3Remove from the heat and pour into a heat safe container and let it cool before placing into the fridge to store.

4It will thicken more as it cools and even more in the fridge.

5It will keep for around a week in the fridge.
