Vegan Fajitas Recipe

Ingredients

For the Tomato Salsa:

4 Medium Tomatoes

1/2 cup Cilantro Chopped

1/2 Medium Onion White, Yellow or Brown, Chopped

1/2 tsp Crushed Garlic

1 Tbsp Lime Juice freshly squeezed

1 Tbsp Olive Oil

Sea Salt and Black Pepper To Taste

For the Guacamole:

2 Medium Avocados

1 Tbsp Lime Juice Freshly Squeezed

Sea Salt and Black Pepper To Taste

For the Sour Cream:

1 Recipe Vegan Sour Cream

For the Sautéed Veggies:

1 Medium Onion White, Yellow or Brown, Chopped

1 tsp Crushed Garlic

1 Tbsp Olive Oil

15 ounce Can Black Beans Drained

1/2 tsp Cumin

1/4 tsp Cayenne Pepper

1/2 tsp Paprika

2 Small Zucchini Sliced

1 Medium Carrot Sliced into strips

2 and 1/2 cups Cremini Mushrooms (240g) Sliced

1 Medium Green Bell Pepper Sliced into strips

Sea Salt and Black Pepper To Taste

For the Tortillas:

8 Tortillas Wheat or Corn

For Serving:

Lime Wedges

Instructions

1Prepare your tomato salsa. Chop the tomatoes and add to a bowl with the chopped cilantro, onion and garlic and mix in. Add the lime and olive oil and a little sea salt and black pepper.

2Prepare your guacamole. Mash the avocados and add in the lime juice and salt and black pepper to taste.

3Prepare your sour cream. Make up a batch of vegan sour cream according to the recipe (linked above).

4Prepare your sautéed veggies. Add the onion and garlic to a pan with the olive oil and sauté until the onions are softened. Add in the black beans and spices and sauté for a minute. Then add in all the chopped veggies and cook until slightly softened but still a little al dente. Add sea salt and black pepper to taste.

5Prepare your tortillas. While your veggies are sautéeing, wrap your tortillas in foil and place into the oven for 15 minutes at 285°F (140°C) to heat through.*

6Take everything to the table so that fajitas can be assembled to everyone's taste. Serve with lime wedges.
