Vegan Corndog Muffins Recipe

1 batch Smoky Vegan Carrot Dogs

1 cup Cornmeal

1 cup Bread Flour

2 tsp Baking Powder

1/2 tsp Salt

1/4 tsp Dry Mustard Powder

1/4 tsp Onion Powder

1/4 tsp Garlic Powder

1 Flax Egg 3 Tbs very hot water 1 Tbs ground Flaxseed Meal

3 Tbs very hot water

1 Tbs ground Flaxseed Meal

1/4 cup Maple Syrup

1 cup Unsweetened Almond Milk

2 tsp Apple Cider Vinegar


1Prepare the Smoky Vegan Carrot Dogs per the recipe’s instructions

2Prepare the batter by combining all dry ingredients together in a large bowl

3Prepare the Flax Egg and add to the dry mix

4Add the Maple Syrup and stir thoroughly

5Mix the Apple Cider Vinegar and the Unsweetened Almond Milk together and pour into the dry mix.

6Stir batter thoroughly until smooth

7Spoon the batter into a mini muffin pan cup until just level with the top

8Cut a carrot dog until it is slightly taller than the muffin cup and insert into the center of each cup

9Bake in a 375-degree oven for 20 minutes

10Serve with your choice of condiments
