Vegan Blueberry Waffles

Vegan Blueberry Waffles Recipe

1 and 1/4 cup All Purpose Flour (156g)

2 tsp Baking Powder

3 Tbsp White Granulated Sugar

1/4 tsp Salt

2 Tbsp Coconut Oil

1 and 1/4 cups Soy Milk (300ml) or other non-dairy milk

2 tsp Vanilla Extract

3 ounces Fresh Blueberries (85g)


1Set your waffle iron to preheat while you mix the batter.

2Sift the flour into a mixing bowl and add the baking powder, sugar and salt.

3Add in the coconut oil, non-dairy milk and vanilla and whisk with a hand whisk to remove any lumps.

4Add in the blueberries and fold in.

5When your waffle maker is heated, pour out the batter (use as much as recommended according to the waffle maker manufacturer instructions) and close the machine.

6Allow to cook for 7-10 minutes until golden and crispy.

7Serve with vegan whipped cream, fresh fruit and maple syrup.
