Sweet Potato Miso Soup With Ginger Recipe

Ingredients

1 piece Fresh Ginger (about 2")

3 med Sweet Potatoes

4 cups Vegetable Broth (low sodium)

3 Tbs White Miso

1/2 cup Almond Milk (unsweetened)

1/2 tsp Onion Powder

1/2 tsp Garlic Powder

1/2 tsp Salt

Instructions

1Peel and mince the ginger

2Saute ginger in a few tablespoons of veg broth until softened

3Peel and boil the sweet potatoes for about 20 minutes or until soft

4Drain the potatoes and mash

5Add ginger,veggie broth, and spices and simmer for 10 minutes or so

6Blend soup (immersion or blender) until smooth

7Add miso to almond milk and whisk until smooth

8Slowly stir in miso/milk mixture and heat for another minute or two

9Adj spices if necessary
