Carrot And Turmeric Detox Soup Recipe

8 carrots in slices
2 potatoes in cubes
1 onion chopped
5 cups vegetable broth
½ cup coconut milk I use full fat but you can use light if you prefer
1 tbsp curry powder
2 tsp of turmeric
¼ finely grated orange peel
2 tbsp olive oil
salt and pepper
Fresh coriander for topping optiona
1Peel the carrots and cut into slices.
2Peel the onion and chopped.
3In a saucepan heat olive oil on low heat, add onion, curry, turmeric and pepper, heat 2 min before adding carrots and potatoes. Sweat the vegetables about 5 min at medium heat before adding the vegetable broth cover and simmer for 25 minutes.
4Remove form heat add the coconut milk and season to taste
5Mix with a mixer and add the coconut milk and mix well
