Simple White Bean Pasta Recipe

Ingredients

8 oz Penne Pasta

4 cloves Garlic (minced)

1 can White Beans (15oz)

1 can Chopped Tomatoes (15oz)

1/2 cup Roasted Bell Peppers

2 Tbs Lemon Juice

2 Tbs Nutritional Yeast

1 tsp Rubbed Sage

1/2 tsp Garlic Salt

1/4 tsp Ground Cumin

Instructions

1Preheat oven to 400 degrees F.

2Roast 2 whole Bell Peppers on a parchment lines cookie sheet for 20 minutes

3Turn peppers and roast other side for an additional 20 minutes

4Place roasted peppers in Ziplock Freezer Bag to steam.

5Saute garlic in 4-5 Tbs veg broth until softened

6Slowly stir in beans and simmer until heated through

7Carefully cut off tops of peppers and remove all seeds and outer skin

8Blend beans, peppers, and remaining spices in high-speed blender until smooth

9Prepare Pasta according to package directions and drain

10Return pasta to pan and add drained tomatoes, stirring well to mix

11Fold in sauce and stir until pasta is coated evenly.
