Orange & Blueberry Compote Chia Parfait Recipe

Ingredients
For the Orange Yogurt
½ cup vegan yogurt I like Riviera's coconut milk yogurt brand, linked in the paragraphs above.
2 tbsp chia seeds
1 medium orange peeled, seeds removed if there are any
¼ tsp vanilla extract
1-2 tbsp pure maple syrup sub: any other liquid sweetener. Taste the mixture before adding this, or it may get sweeter than you'd like. Omit if the sugar level is already enough.
For the Blueberry Compote
½ cup frozen wild blueberries sub: fresh blueberries // I find that wild blueberries are sweeter, and they usually come frozen
1 tsp lemon juice
2 tbsp water
¼ tsp vanilla extract
1 tbsp coconut sugar sub: monkfruit sugar, xylitol, brown sugar
Instructions
1Cook together all compote ingredients on the stove for a few minutes over medium-low heat until thickened. Set aside when it has thickened to the consistency of a compote.
2Blend together all yogurt ingredients until a creamy mixture has formed.
3Add half of the orange mixture into the bottom of a cup, followed by half of the compote, then repeat to make a layered parfait.
4Eat it right away, or refrigerate to enjoy it cold! Personally, I loved eating the warm compote with the cold yogurt.
