Sheet Pan Tofu Fajitas Recipe

👩🍳Cook Time: 15 mins
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon pepper
14 ounce extra firm tofu in thin sliced
1 red bell pepper sliced
1 green bell pepper sliced
1 large red onion
2 tablespoons canola oil
8 small flour tortillas
1Preheat the oven to 375 ˚F
2With a clean tablecloth, gently press the tofu to remove the water, then cut it into 24 thin slices.
3Slice the bell peppers and onion
4In a small bowl combine all the spices and mix.
5Add tofu and vegetables on a sheet pan. Add canola oil and sprinkle spice mix, stir gently.
6Place in the oven and cook for 15 minutes
7Remove from the oven and add the tofu and vegetables into the tortillas and garnish with coriander, guacamole and salsa if desired.
