Mint Chocolate Chip Smoothie Recipe

Ingredients

14oz (400g) Frozen Banana (previously peeled, quartered and frozen)

1 cup (240ml) Coconut Milk*

Handful Fresh Mint Leaves (approximately 1/2 cup unpacked)

2.5oz (70g) Baby Spinach

1/4 tsp Mint Extract

2 oz (56g) Chopped Dark Chocolate (or replace with cacao nibs)

Instructions

1Add the coconut milk to the blender jug along with the mint leaves, baby spinach and mint extract and blend. Then add in the frozen bananas and blend until thick and smooth.

2Pour out into 2 glasses and top with chopped dark chocolate or cacao nibs.
