Mini Gingerbread Doughnuts Recipe

For the Doughnuts

3 ½ cups all-purpose flour

¾ cup granulated sugar

1 teaspoon ground ginger

1 tsp of cinnamon

½ teaspoon of salt

¾ cup regular molasses or ⅓ cup blackstrap molasses

¾ cup margarine I use Becel plant base

½ cup applesauce

11/2 tsp baking soda

½ black coffee hot

For the icing

2 cups powdered sugar

1 ½ tsp. maple syrup

3 tablespoons almond milk

¼ teaspoon cinnamon


1Preheat the oven to 375 ˚F

2Pour all the ingredients into a bowl, omitting the baking soda and coffee

3Add the baking soda to the coffee and mix well.

4Add the coffee mixture to the bowl with the other ingredients and beat to combine all the ingredients.

5Pour the batter into the donut pan and bake for 12 minutes.

6Remove from the oven and leave to cool before glazing.

7While the donuts are cooling, mix together the ingredients for the frosting.

8When the frosting is done and the donuts are cool, dip the tops of the donuts and return them to the cooling rack.

9If you are looking for a thick frosting, dip the donuts twice after the first dip is lightly set.

10Sprinkle with Christmas candy if desired.
