Tropical Porridge Recipe

👩🍳Cook Time: 5 mins
½ cup of quinoa flakes
1 ½ cups of plain plant-based milk I use oat milk
2 tbsp raw coconut sugar or maple syrup
½ tsp pure vanilla extract
1 tbsp baobab
¼ cup plain coconut yogurt I use Riviera
2 tsp pitaya powder
maple syrup to taste
Fruits & coconut flakes to garnish
1In a small pot blend quinoa with milk, vanilla and sugar and bring into a boil.
2Reduce the heat and stir until the mixture thickens.
3Remove from the heat and mix in baobab. Transfer the into your breakfast bowl.
4In a small bowl blend yogurt with pitaya powder and sweetener and pour on top of your porridge.
5Decorate with coconut flakes and fruits.

I’m a vegan foodie (as you can probably tell by this blog), a lover of long walks and somewhere awkwardly between extrovert and introvert. Veganism and healthy eating are a huge part of my life, given that both have helped me overcome an unhealthy relationship with food. Finding balance took a lot of time and patience.
