Grilled Vegetables Buddha Bowl Recipe

Ingredients

1 cup brown rice

1 tbsp. olive oil

3 tsp. tamari sauce

¼ tsp. roasted sesame oil

1 clove of garlic grated

2 tsp maple syrup

1 red onion

1 zucchini

1 red pepper

6 to 8 Asparagus

1 block of extra firm tofu

salt and pepper to taste

Dressing

¼ cup hummus of your choice

2 tbsp water

2 tbsp of maple syrup

Instructions

1Peel and slice the vegetables, put the vegetables and the tofu in a large bowl.

2In another bowl, combine the olive oil, tamari sauce, sesame oil, garlic and maple syrup, mix well and add to the vegetables and tofu. Leave to marinate for a minimum of 1 hour

3Preheat the BBQ to Medium high.

4Put the vegetables on the BBQ grill and cook for 12 minutes. turning the vegetables so that they are roasted on each side

5Cook rice according to package directions.

6In a bowl or large deep plate, place the rice, then add the vegetables, roasts and tofu. Serve with a generous amount of hummus dressing.
