Fat-Free Chipotle Adobo Sauce Recipe

Ingredients

10 Ancho Chile Peppers

10 Guajillo Chile Peppers

3 cloves garlic

1 cup water

1/4 cup Apple Cider Vinegar

2 Tbs Tomato Paste

2 tsp Brown Sugar (or sweetener of choice)

1 tsp Mexican Oregano

3/4 tsp Chipotle Chili Powder

1/2 tsp Cumin

1/2 tsp Salt

1/4 tsp Pepper

1/8 tsp Cloves

Instructions

1Preheat oven to 250 degrees F

2Arrange chiles and garlic on a parchment-lined cookie sheet

3Roast for 10 minutes

4Remove skin from garlic and set aside for now

5Remove stems from chiles and make a slit down the length of each chile

6Remove as many seeds and ribs as possible, placing cleaned chiles in a large soup pot

7Please wash your hands after handling chiles – the oils can burn your eyes

8Add enough water to the pot to barely cover chiles and bring to a boil

9Remove from heat and cover. Let sit 10 minutes.

10Remove chiles from pot and place in a blender along with 1 cup of the chile water.

11Add all remaining ingredients and blend until smooth
