Easy Fettuccini Alfredo Recipe

Ingredients

2 Yukon Gold Potatoes (quartered)

1/4 Onion (diced)

1/2 cup Cashews

1 cup Water used to boil potatoes

1 Tbs Italian Seasoning

1 tsp Lemon Juice

3 cloves Garlic

Salt & Pepper to taste

1 Tbs Nutritional Yeast

Fettuccini Noodles

Instructions

1Soak cashews in 1 cup hot water while preparing sauce

2Peel potatoes if desired and quarter them

3Add potatoes and onion to a large pot and cover with cold water

4Once the water is boiling, cook for 10 minutes

5Remove veggies with a slotted spoon and add to blender

6Add 1 cup of the potato water

7Drain cashews and add to blender

8Add remaining ingredients and blend until smooth

9Add more water to get the consistency you desire

10Season with salt and pepper to taste

11Prepare Fettuccini according to package instructions

12Add 1 bag frozen Broccoli during last 5 minutes of boil

13Drain thoroughly and stir in Alfredo Sauce
