Ingredients

12 oz box fusilli pasta

10 oz bag frozen broccoli & cauliflower

5–10 cherry tomatoes

Sauce 1 cup riced cauliflower 1/2 cup water 2 tsp minced garlic 15 oz can white beans 1 Tbs nutritional yeast 1 Tbs lemon juice 2 tsp prepared horseradish (optional) 1/2 tsp salt 1/4 tsp garlic powder 1/4 tsp onion powder dash of hot sauce 1/2 cup unsweetened almond milk

1 cup riced cauliflower

1/2 cup water

2 tsp minced garlic

15 oz can white beans

1 Tbs nutritional yeast

1 Tbs lemon juice

2 tsp prepared horseradish (optional)

1/2 tsp salt

1/4 tsp garlic powder

1/4 tsp onion powder

dash of hot sauce

1/2 cup unsweetened almond milk

Instructions

1In a small pan, add riced cauliflower and water and simmer 1-2 minutes

2Add garlic and stir.

3Drain and rinse beans and add to mix. Simmer 3-5 minutes until cauliflower softens.

4Meanwhile add remaining sauce ingredients (except milk) to blender

5Add bean/cauliflower mixture and blend, adding almond milk to get desired consistency

6Puree until smooth

7Prepare pasta according to directions

8Microwave broccoli/cauliflower according to directions

9Slice cherry tomatoes in half

10Drain pasta and add veggies, tomatoes, and sauce – stir to combine

11Serve
