Chocolate Sheet Cake With Chocolate Fudge Frosting Recipe

Ingredients

For the Sheet Cake:

2 cups All Purpose Flour (250g)

1 cup White Granulated Sugar (200g)

1/2 cup Light Brown Sugar (100g)

3/4 cup Cocoa Powder (65g) Unsweetened

1 tsp Baking Soda

1/2 tsp Salt

1 and 1/2 cups Vegan Buttermilk (360ml) 1 and 1/2 Tbsp Lemon Juice + Soy Milk up to the 1 and 1/2 cup line

1 Flax Egg 1 Tbsp Ground Flaxseed + 3 Tbsp Hot Water

1/2 cup Canola Oil (120ml) or Vegetable Oil

1 Tbsp Distilled White Vinegar or Apple Cider Vinegar

2 tsp Vanilla Extract

For the Chocolate Fudge Frosting:

1/2 cup Vegan Butter (112g)

4 and 1/2 cups Powdered Sugar (540g)

3/4 cup Cocoa Powder (65g)

4 Tbsp Soy Milk

2 tsp Vanilla Extract

For Decoration:

1/2 cup Vegan Chocolate Chips Melted

Instructions

1Preheat the oven to 350°F (180°C). Spray a 10x15 sheet pan with non-stick spray.

2Sift the flour and cocoa into a mixing bowl and add the white sugar, brown sugar, baking soda and salt and mix together.

3Prepare the vegan buttermilk by adding 1 and 1/2 tablespoons of lemon juice to a measuring jug and then adding soy milk up to the 1 and 1/2 cup (360ml) line and allowing it to curdle.

4Prepare your flax egg by mixing 1 Tbsp ground flaxseed with 3 Tbsp Hot Water and allowing it to sit for a minute and become gloopy.

5Add the vegan buttermilk, flax egg, oil, vinegar and vanilla to the mixing bowl and whisk in with a hand whisk.

6Pour your batter into the prepared sheet pan and spread across evenly.

7Place into the oven and bake for 15-20 minutes. Mine was ready at 17 minutes.

8When a toothpick inserted into the cake comes out clean, it's ready.

9Allow to cool completely before frosting.

10Prepare your frosting by adding all the ingredients to an electric mixing bowl. Start on low speed, gradually increasing speed until your frosting is very thick and smooth.

11This is a very thick frosting, but make sure it is still spreadable. If not, add another tablespoon of soy milk.

12When the cake is completely cool, spread on the frosting thickly.

13Top with drizzled melted dark chocolate.
