Strawberry Cashew Yogurt Recipe

🔪Prep Time: 10 minutes


1 and 1/2 cups Raw Cashews (225g) Soaked for 1 hour

1/2 cup Canned Coconut Milk (120ml) Full Fat, Unsweetened

2 Tbsp Lemon Juice Freshly squeezed

1 tsp Vanilla Extract

Pinch Sea Salt

2 Probiotic Capsules

2 Tbsp Maple Syrup

8 Strawberries Plus more for serving


1Soak the cashews in water for 1 hour. Then rinse and drain them and add to a blender jug along with the coconut milk, lemon juice, vanilla, sea salt, maple syrup and strawberries.

2Open up the capsules of probiotics and empty the contents into the blender jug.

3Blend until it is very smooth and no longer grainy. This may take a few minutes.

4If you have a tamper attachment with your blender, then use this to push the ingredients down onto the blades.

5If not, then stop regularly and scrape down the sides of the blender and blend again.

6Pour out into two bowls and serve with fresh sliced strawberries.
