Fluffy No-Oil Rice Pilaf Recipe

1 cup Angel Hair Pasta (or Vermicelli)

1/2 Onion (diced)

1/2 Bell Pepper (diced)

2 cloves Garlic (minced)

4 Mushrooms (diced)

1 cup Baby Spinach (chopped)

2 cups Rice (at least 1/4 cup wild rice)

3 cups Low Sodium Vegetable Broth

1/4 cup Soy Sauce (low sodium)

1/4 cup Almond Slivers (optional)


1Break up pasta into small inch long pieces

2Lightly toast pasta and almonds (if using) in a skillet until slightly browned

3Add to large pasta pot with a lid

4Chop all veggies and add to pot

5Rinse and drain rice

6Lightly toast rice in same skillet, over med-low heat until dry and toasty

7Add rice to pot

8Add veggie broth and soy sauce

9Bring to a boil and then reduce heat to simmer

10Simmer 20 minutes

11Remove from heat and carefully remove lid

12Drape clean kitchen towel over pan and replace lid

13Let rest 5-10 minutes

14Remove lid and towel and fluff with fork

15Season to taste
