Fat Free Refried Beans Recipe

Ingredients

2 cups Pinto Beans (dry)

1/2 Red Onion

1/2 Red Bell Pepper

1 can Chopped Green Chiles (7oz)

1/4 tsp Onion Powder

1/4 tsp Garlic Powder

1/2 tsp Chili Powder

1/2 tsp Ground Cumin

1/4 tsp Salt

Instructions

1Soak beans overnight with enough water to cover

2The next day, drain and rinse beans well and add more water to cover 4" above beans.

3Bring to a boil then reduce heat to a simmer.

4Cover and simmer 3-4 hrs or until extremely tender.

5Add more water as needed to prevent scorching.

6Drain and set aside.

7In a large skillet, saute veggies in a few Tbs of water until softened

8Add 1 to 1 1/2 cups of cooked beans and the spices, stir well to mix

9Mash with potato masher or use a blender to create a smooth paste

10Return bean mixture to pot and add remaining whole beans.

11Stir well to blend and serve.
