Vegan Sweet Potato Pancakes (Gluten-Free) Recipe

Ingredients

2 cups gluten-free oat flour

2 tsp baking powder

1 cup mashed sweet potato

1.5 cups plant milk

3 tbsp maple syrup, plus more for serving

Instructions

1Whisk together the oat flour and the baking powder. Then, add the mashed sweet potato, plant milk, and maple syrup. Whisk together once more until well-combined.

2Add around 2-3 tbsp of the batter to a hot non-stick frying pan. Cook for around 2-3 minutes, until the edges start to brown. Flip, and cook for a further 30 seconds - 1 minute on the other side.

3Serve the pancakes immediately with maple syrup and other toppings of your choice.
